Last night after R.I.P.P.E.D. (with the bonus Core Section) we had a boat pose challenge, if you don’t know boat pose… keep reading! To celebrate the winner of the challenge I made a quick, easy and delicious FIESTA SALAD (yum!).
Ingredients: 2 cups chopped romaine lettuce 1 cup canned black beans (rinsed, drained) 1/2 a medium baked (or microwaved) sweet potato (cubed, with skin) 1/3 cup diced tomato 1/4 cup frozen thawed corn kernels 1/4 cup shredded mexican blend cheese
Lime Vinaigrette: 1 tablespoon lime juice 1 tablespoon avocado oil (or oil of your choice) 1/4 teaspoon chopped garlic salt and pepper to taste
Directions: Top chopped romaine lettuce with black beans, sweet potato, tomato, and corn. Drizzle with Lime Vinaigrette and sprinkle with cheese.
Boat Pose benefits: *Strengthens the abdomen, hip flexors, and spine *Stimulates the kidneys, thyroid and prostate glands, and intestines *Helps relieve stress *Improves digestion
How-to: -Balance on the tripod of your sit bones. -Lengthen through the top of your head keeping you back long and flat and your belly pulled in tight. -Start holding for a few breaths, work your way to 10-20 seconds and gradually increase your time to 1 minute. Modifications: -Start with your legs bent.
